CHIA SEED PUDDING

WHAT IS IT?

It’s a healthy pudding-like snack made out of chia seeds and coconut milk. When mixed together, the coconut milk is absorbed by the chia seed and becomes gel-like in texture.

HOW DO I MAKE IT?

  1. Put 6 tablespoons of chia seed into a roughly 500ml container.
  2. Add a 400ml can of coconut milk to the container then mix or stir together.
  3. Leave it in the fridge for at least half an hour to let it “gel”
  4. Add something sweet like bits of fruit and/or maple syrup.  For one batch, 1.5 table spoons of maple syrup is good.  It’s delicious with frozen blueberries!

PRO TIP:
can-shakeSince the coconut cream tends to gather on one side of the can, it can be hard get out all the creamy goodness without scraping it out.  To avoid the extra work and hassle, just shake the can rigorously like a crazy person for about 5 seconds before opening the can. All the thick creamy bits should pour out nicely after that.

WHERE DO I BUY THE BEST COCONUT MILK?

Not all coconut milk brands are equal. Some are less creamy and sort of grainy.

We’ve tried a variety of brands and Aroy-D seems to be the best.

A good price for them is about $1.20 or so I think.

We got two trays of cans when they were on sale at T&T.

Asian grocery stores tend to have them at decent prices.

THE TEXTURE:
Chia seeds are a mucilaginous type of seed, which means they absorb up to 12 times their weight in liquid when soaked and turn that liquid into a jelly coating which gives them that distinct gel texture.

NUTRITION:
Chia seeds are a rich source of the Daily value of the B vitamins thiamine and niacin, and are a rich source of the dietary minerals calcium, iron, magnesium, manganese, phosphorus, and zinc. Chia seeds are also a good source riboflavin and folate.
